This beer is one of my favorites.
It has a golden tan color. The hops aroma is very nice. It has little bit of a fruity aroma as well.
The flavor has a nice maltiness.
It is a good session beer.
My first beer pairing dinner went off fairly well.
First Course
The Butternut Squash Soup was well received by a number of guests, but the recipe leaves something to be desired. It is missing quantities of some of the ingredients leaving you guessing, the directions skipped steps, and directions added ingredients. But, I made adjustments (including adding a whole another squash to reel in the ginger flavors) that turned out a very good soup in the end. The soup freezes very well for enjoying on another cold winter evening.
I enjoyed Bison Brewing’s Gingerbread Ale with the soup, but it should be noted that the temperature of this beer affects the spice flavor so for more of the spices you should have it around 50°F.
Second Course
The Smoked Trout and Green Beans has the easiest dish in this meal other than the S’mores. The green onions used in the recipe don’t impart any noticeable flavors to the trout and service as a source of moisture in the smoking process. I was able to debone six trout in just a few minutes and keep the fish warm on steaming tray while guest arrived. The Czechvar (Budweiser Budvar) was well received including one guest adding it to their shopping list so I sent some of it home with them.
Third Course
The Rotisserie Chicken Salad recipe from Stephen Beaumont’s book was very good. The vinaigrette is just wonderful and I will be preparing this recipe anytime we are looking for a good vinaigrette.
The Bell’s Oberon Ale was just okay as it was not fresh enough given it had been stored at room temperature by the retailer. I should looked for some kept in a cooler. The wheat pale ale flavors were a good balance with the salad, which had flavors all over the place.
Fourth Course
I was too busy and I didn’t get a chance to taste the Camembert, Fontina, and Gorgonzola cheeses during the dinner with the beer, but one guest indicated the cheeses were the best food-beer pairing of the dinner even though she didn’t care for the Fuller’s London Porter.
The Fuller’s London Porter is one my favorite beers and it almost always in my refrigerator. The smoky chocolate flavors in this beer is what I like about it.
Fifth Course
Everyone surprised me with the desserts by all going for the S’mores. I really enjoyed the Raspberry Crisps. The raspberries would have been easier to handle if they hadn’t be so frozen causing the ingredients to not mix easily.
The Cantillon’s Rosé de Gambrinus caused the reaction that I expected from the guest that were not use to the Lambic style of beer, but it is still a very tasty beer and a sample was a right amount. The night before the dinner, I tried the Le Coq Imperial Extra Double Stout 2001 to see what flavors it would be bias towards given all of the variations I had seen in the reviews for the 2001 vintage. Well, I panicked, because the initial aroma was worcestershire! I had Lindemans Framboise as a backup beer, which pulled into the pairing. I let everyone try the Le Coq Imperial Extra Double Stout 2001 to get their reaction and I indicated a beef pairing would have been the right thing for it. The Lindemans Framboise and Cantillon’s Rosé de Gambrinus allowed everyone to see the extremes of this style of beer and they both paired very well with the desserts.
Well, I am putting together my first beer tasting or pairing dinner.

I hope that I have put together a nice menu with a wide variety of beers so that everyone comes away with something he or she really enjoyed. I am hope the pairings will show everyone what the possibilities are. Would you ever think to try a $8 bottle of Cantillon’s Rosé de Gambrinus with S’mores?
It has a dry mellow maltiness that finishes very dry. The flavor has a fuller body than the standard Guinness that everyone knows.
It pours with mild head that fades quickly. The carbonation gives it a little crispness, which is very nice with the dry finish.
At first, I didn’t enjoy this beer, but I think I really do like it. The dryness is what I like about it.
I stopped into the Smoky Mountain Brewery today after hiking to Laurel Falls and the old growth trees just past the falls.
I picked up the Porter, which had a little chocolate flavors in the initial taste. It had a little sweetness along with the chocolate flavors. The hop flavor was very nice and true to the style.
I had this as a growler, which may have added to the flavor.
I got a chance to try Yellowhammer’s IPA and Belgian White Ale beer today. Today was the initial release of their beers.
Both, are very nice. The IPA is the best with hop flavors that hold on to you to the end. The Belgian White Ale has spices that can surprise you, but I enjoyed it.

Belgian White Ale – 4.8% ABV
Wheat ale brewed with fresh ginger and lime leaves.
American IPA – 6.8% ABV
Brewed with four select malts and a blend of Centennial, Columbus, Amarillo and Simcoe hops.
The beers are very good and I look forward Yellowhammer’s future beers.
The whole team was very proud of the beers today and I was glad I got to be a part of the release.
Mike and Allison Spratley are Blue Pants Brewery. Blue Pants released their first beer today at The Nook in Huntsville, Alabama. It is called Knickerbocker Red in the style of a American Red Ale.
Knickerbocker Red presents with a sweet nose. There is a little woodiness in the nose as well. The initial taste has a sweetness. The hops are very mellow, but they arrive late in the taste and hold on to the finish. The finish is a little alkaline, too.
Blue Pants is the third brewery to open in Huntsville. Initially, Blue Pants will have limited distribution throughout Huntsville.
